The hill country is beautiful. If you do anything, be sure to see the Texas Museum in Austin, along with the funky night life. San Antonio; The Alamo and the rest of the missions are cool. The riverwalk is good also. Fredericksburg is a charming touristy small town.

I would disagree on your assessment of Galveston. A great collection of Victorian era architecture; catch a show at The Grand; camp right n the beach (admittedly not the white sand and blue water of Florida but beautiful and peaceful in its own way this time of year) at one of of three different parks - sandpiper, Dellanera, or the state park. Also some great restaurants (Gaidos for fresh seafood).
