The first time I drove this route I took a day from Jasper (Mt Robeson actually) to Vancouver - via the Sea-to-sky Hwy (99). The higest, Duffy Lake part was still gravel. But the last leg, after Whistler, was tiring - paved by curvy at the end of the day.
But asking if there's anything to see or do in this part of Canada is like asking if there's anything to see in Colorado between Grand Junction and Rocky Mtn Nat Park!
East from Vancouver -
Harrison Hot Springs (bit of a detour)
Hope
Frasier Canyon (Hwy 1) (somewhat like Glennwood Canyon)
or Hwy 5 the Coke (rather like I70 west of Denver)
Kamloops
Hwy 5 to Clearwater - side trip to Wells Gray PP (waterfalls, lakes, lava flows)
The rest of 5 to the junction with 16 is a 'bit' boring, in a broad valley, but few obvious side trips. Still very much in the mountains, just not as spectacular as other parts of BC.
Toward the north end of 5 there's a prov. park with walks among forest covered sand dunes (check the Prov. Park web site).

Hwy 1 east of Kamloops is also scenic. Between Revelstoke and Golden it passes through 2 Nat parks, and crosses Rogers Pass (with snow sheds). Yoho Nat Park is loaded with sights before you get to Lake Louise.
Hwy 3, CrowsNest is also a scenic way across BC, with Manning Nat Park, Okanongan (sp) wine/orchard country, Birkenstock-loving Nelson, Kootenay Lake and Pass, and Kootenay Nat Park (and on into Banff).
Too many options, and too many places to stop. Start by browsing the BC prov. parks web site.
