Weekends are the worst time to use an ATM - a family member gets paid in the US and deposits part of the paycheck then family back home withdraws it.
We use credit union debit cards, there is a small fee and usually we're limited to 3,000 pesos per day. We have two accounts with two different credit unions and we usually try to find an ATM at a bank just in case there's a problem and the card gets swallowed.
Much faster and easier than changing money at a bank. Always notify the bank/credit union that you'll be using the card in Mexico or they'll most likely shut it off suspecting fraudulent use.
US Dollars I've found are not easy to spend once you get away from the borders / popular destinations or ports where cruise ships stop.
