Pheasant Ridge looks fairly nice, though I've only driven through it. Never stayed there because I have relatives in the area. Your mom should be able to get around there just fine.
It's just off I-5 near Tualatin- less than twenty minutes from downtown Portland, and less than five minutes to hwy 217, which goes to Beaverton.
