This is a great time to be in Utah - from what I heard it might be a little warm today but we usually only travel into Utah when the weather is good.
We have never found that we need reservations in the off season.
We also generally stay in the Park - Last time in Zion with the Kids-we rented a room for them and we just Camped in the parking lot, because there were so few people they said no problem.
After leaving Zion I suggest that you head to Bryce and then take the Hogback (Rt 12) over to Capital Reef and Goblins then over to Moab and if needed head back down catching Monument Valley and then Canyon De Chelly.
