Other places to put on the list in Monterrey area:
Monterey Bay Aquarium since it's already something you are considering. It was fantastic. And the site of several scenes from Star Trek IV. And as long as you are there, lots of good food at Cannery Row, which the aquarium is on one end of. So you can leave your rig parked. I believe there are city lots nearby that can accommodate RVs and trailers.
Also, spend at least a little time in Carmel-by-the-Sea. Good chance of seeing stars and other well known people walking around or in shops and restaurants.
And take a drive on 17 Mile Drive in Pebble Beach. There is a fee because it's all private, but it's worth the money.
