California winter RV locations without freezing temps?

Need to be a bit more specific in location. Anywhere in the Sacramento Valley will be temperate. Freezing conditions in the Valley last just a couple of days at a time and are not common in general. I have never winterized. If a few nights of freezing are predicted I will open cabinets and turn the heater to its lowest setting.

I would say from Redding southward will give you nice weather. I'm a native northern Californian.
