We've always liked the Dog Canyon campground in Guadalupe Mountain NP. The CG itself isn't anything special; the four or so RV sites are pick your spot on a gravel lot but the setting is awesome and you'll likely have the place to yourself other than maybe a couple of tenters.
If you should end up in the area, be sure to visit Sitting Bull Falls in Lincoln NF and watch out for deer and cattle in the road.
Brantley Lake SP is another campground in the area with a few more amenities.
