Most but not all federal/state campgrounds offer a few first come first serve camp sites and we usually have no problem getting a site as long as we come midweek.
We don't like to reserve to far in advance as well and even on busy weekends we just come early and nab a pretty nice site. Of course there is no guarantee that will always work.
Sometimes you just have to reserve ahead of time if you really need a spot for a particular timeframe, most accept cancellations or changes in itinerary if done in a timely manner.
