Staying in and around the Utah parks is tough. If you've been looking at the NPS CG's and indeed, they fill fast. In Zion, you do have the option of South CG with is first come, first served. At Bryce, Sunset CG has most of the sites FCFS. All of the sites at Fruita CG in Capitol Reef NP are FCFS. Around Moab, check out the BLM CG's along the river and on the road up to Island in the Sky. All are FCFS. Of course with any of these, one can't expect to arrive on a Friday night with any hope of finding a site.
