Don't discount those other options in between, we have some excellent food here in south Louisiana and parts of the coastal region can have near Florida like semi-tropical weather throughout the winter with temperatures rarely dropping below freezing, but with a much more reasonable cost of living than much of Florida. (warm enough that in some micro-climates tropical plants like citrus, bananas, sugarcane, and even some more sensitive plants that can't tolerate much if any freezing weather can survive). If I were to pick an ideal part of the state for snowbirds it would likely be the north side of Vermillion Bay,in the Abbeville to New Iberia area.
