@Laman. What you just said about the parks being booked up in the central and south part of the state also happens up here in the panhandle at certain parks. This is the reason that my wife and I have started planning almost a year and a half out on certain places and times and when the window comes open to make the reservations we go ahead and make them. We are not the type of people that make a bunch then cancel later we can't afford that. We have certain times we like to go and we go ahead and book them way ahead and so far we have been able to stick to those dates. Don't get me wrong we still do some last minute trips and also try to get some trips in and don't have any luck. It is always better to be camping and enjoying the outdoors than being at work.
Not sure where in Florida you're from, but, for winter camping, you may want to try Fish Eating Creek State Campground in Palmdale (South of Lake Placid on US 27). When I lived in Florida, that used to be one of my favorite campgrounds (along with Long Key State Park), and I've never seen it full.
