You have clearly gotten a bunch of answers, but the truth is that how long you can stay depends entirely on you and your rig. It is possible to drink, cook, do basic hygiene on stuff and yourselves on perhaps 2-3 gallons of water a day, less in a real pinch. At the other end, the designers of home water/septic systems calculate 100 gallons per day per bedroom. Water and waste water will be your limiting factors. You can do the math, the only question is how carefully you want to work the limits.
