I would never leave a motor home south unattended during the summer. The ones I saw always had mechanical issues after just a couple of years. The only place I would take a chance might be AZ where it is very arid.
Doubt if you have mold issues in AZ. In TX I put out two big buckets of damp rid, couple of pans of non clumping cat litter, couple of pans of charcoal, and crushed newspaper in the cabinets, then put a little Borax where it can't be seen for things that crawl. Never ever had a problem.
My in-laws left a car in FL only to come back to it completely covered in mold on the inside. I'm guessing if you don't run an AC you're going to have problems in that state.
All depends on which state you're in I guess with how much you can get away with.
