Having lived in Florida (Orlando area) for almost 20 years, I can confirm that you could very well have mold problems if you leave a camper all closed up during Florida's long, hot, humid, summer. Highs in the 90s, lows around 70-75 every day and humidity to go with it is the norm for 6-7 months of the year. And don't forget the rain that shows up about every day.
Even with an air conditioned home, you can still have mold show up in a closet that isn't opened up regularly. I started leaving closets open after that happened to me. Many people, including me, set the AC to a higher temp during the 'border' months instead of opening windows, just to keep the humidity out. And I can remember running my AC on Christmas Day on at least two occasions - mostly because the humidity was in the 'Ugly' zone.
I'm not sure what the solution would be, but I would start by finding a place with covered parking to keep it out of the direct sun and rain. The sun is extremely hard on everything down here. I think I would then add one or two dehumidifiers and also run the AC at a high setting - something in the 87-90 degree range.
