Long Island Campgrounds
I see there are a few campgrounds on Long Island. Can anybody recommend any. We have no kids. We like to relax and do some surf fishing

Before you pick any of the campgrounds check out if surf fishing is permited on the nearby beach or if it is pier fishing only. Some NYS parks require a surf fishing permit. Check that out as well.
As to driving on LI - don't rely on a regular GPS to keep you off roads you cannot bring an RV or trailer on. They will route you onto roads with low clearance overpasses. Follow the trucks.
