I second the Parker area. Lake Havasu City is not far away in case you do want the occasional amenity. And of course you have to visit the desert bar. 6 miles out in the middle of nowhere is a fantastic bar that 100's of people visit. It's so unique, it's a must see if you are in the area.
Bisbee is a great town that has not be ruined by modern influence (no McDonalds) and is not full of touristy gimmicks like Tombstone. If there is a gunfight in Bisbee, run, it's for real. It is a little cool in the winter though. An old town that looks like you are back in the 1800's.
