I think the biggest issue with "quarantine travel" is if they close the gas stations on the highways, like they did temporarily in New England - until they found out that Yes, truckers need fuel and a bathroom, and No, you will not get needed supplies without truckers.
I have not heard of anyone who was traveling through a state being stopped or detained at a gas station. If you think about it, it makes more sense to allow someone to fill up so they can leave the state instead of holding them or something that prevents them from leaving.
Just have disinfectant wipes and masks with you - use them if for no other reason to avoid confrontations with people.
Having said all that, check the various state's travel restrictions every morning.
