We stay the winter at Rock Crusher and plan to be there for 4 months again this year. We like the park for its state park-like feel. Lots of trees/vegetation. Some sites are quite private. The pool is nice and, as mentioned, there are plenty of activities if you're so inclined.
The Crystal River area isn't a Florida beach kinda place, although there is a small beach west of town a ways. There are several people in the park that kayak as the area has some great places for doing that. Fishing is also a favorite for many. I like to golf and there is a Rock Crusher league where we have 40+ players January-March. Bicycling and motorcycling are also activities some in the park take part in, although you do have to motor to some of the bike trails.
As mention, there are some nice eateries in the area. Crystal River isn't too far from Tampa if you take the toll road down there. We like horse racing and Tampa Bay Downs is just over an hour away. Ocala is about 30-40 minutes away. We just like the more rural atmosphere of the area with a LOT less traffic than further south.
We've met a lot of great folks there, but you need to get into the activities at the clubhouse or find ways to meet those friendly people. The upper level (up the hill) has a campfire late Thursday afternoons and while we don't live up there everyone is always welcome. We usually go because we meet so many people from around the country. A good, friendly bunch.
If you're interested for a long-term stay you might have some difficulty, especially for February, although it's not always full. Weekends can get busy though. Most people that stay there seem to like it.
