All you can do is check the weather before you go. December days can vary from 60s to 30s for highs, depending. No way to predict what weather patterns will be like. You could go to Weather Underground website and search historical date for the month, which will give you normal and record highs and lows for the dates you're considering.
I took my wife to SDC this past March. She was looking forward to seeing the different craft demonstrations (glass blowing, pottery making, etc.) but 3/4 of them were still closed for winter. Neither of us wanted to ride the rides, we're a bit old for that. The music performances in the pavilions were nice, especially the 'country pickers.' Overall, we felt like the place was definitely worth less than half of what we paid. The folks who really make out the best would be the ones who buy an annual pass and take their kids multiple times per year for the rides.
