Hiking.
ATV'ing
Jeeping
Texas is a big state. You can drive all day, call it a night and wake up in Texas. Also take a note of the water and green in the pictures in those links. Can't really say that about AZ.
You should have been in AZ this winter. Plenty of water and the desert was screaming green.
ATVing in an ATV park with a bunch of testosterone crazed boy and kids is not my kind of ATVing. We rode over 1,000 miles in five weeks in Yuma. In Wickenburg we rode 1,600 miles in five weeks all directly from the RV park. Some days we only saw a handful of people. The Hill country is beautiful. I used to deer hunt there as a kid. Just not enough elbow room for me. We did enjoy hiking and Jeeping in Big Bend. The Jeeping in Texas in many instances is somewhat artificial and too crowded.
The problem with Texas is the lack of public land. I found this: 4.5% of Texas is public land which ranks 45th. 56.8% of Arizona is public land which ranks 6th. Just lots and lots of more places to play. The saguaro cactus forest is just as beautiful in its own way as any forested mountain.
