Stoves..you mentioned a Coleman..are you thinking propane or liquid? I am guessing propane..more money but more stable. Anyway..if liquid? Do shop a bit...REI has some outstanding outdoorsy/hiking/small stoves and cook sets.
A person wants to try and avoid cooking IN the vehicle..all the moisture goes right to the soft materials...blankets, clothing and so on. Then it's a bugger to get dry and warm.

Definitely don't use a camp stove inside a car. That would be dangerous or undesirable in at least a few ways: fire danger, water vapor, carbon monoxide....
There are several non-Coleman branded camp stoves available that are comparatively inexpensive and work just fine. They may or may not hold up as long under harsh use.
I have
this little collapsible table in my RV for use with a portable gas grill, but it would work splendidly for a camp stove as well. It's not the strongest table in the world (I would not suggest sitting on it, for example), but otherwise it's nice and light weight, quick and easy to set up, and pretty compact when stored--about the size and shape of a standard collapsible chair. Of course, things like picnic tables, flat rocks, etc. also work fine for camp stove support.
