I would second the suggestion of the Monahans Sandhills SP. just guessing that you are heading South or Southwest so this might be another option but certainly farther North and may not be on your route - Palo Duro Canyon which is closer to Amarillo.
There are quite a few private RV parks along the way but many of them are currently full of people full timing for work in the oil fields. This tends to make things b not so nice so if you are thinking about them just be open minded and look them over.
I recently drove from Midland/Odessa to Dallas and save several prks which looked pretty nice from the highway and might be worth looking at.
