Underappreciated is Big Bend National Park in West Texas. There are about 150 miles of paved roads within the park. Lots of elevation changes. Lots of curves, including switchbacks. Mountain roads, desert roads and Rio Grande River access points. Plenty of pulloffs. Just avoid Easter week. That's their peak camping event requiring use of overflow areas. Before Easter you'll probably catch the lupins blooming (2' tall bluebonnets).
