I was just in Vegas in February for training, what a fun city!!!
I would suggest you take an evening and just walk the strip. It is so much fun just walking around and seeing everything lit up at night. Truly amazing! Walk through some of the casinos... The Bellagio is gorgeous, the Venetian is amazing, the Parisian is awesome!
Hoover Dam was really cool, though we didn't have time to take the tour. Water level is REALLY low out there, but it is still impressive to see.
I didn't get a chance to go to Freemont St, but I have heard it is really cool to see.
Driving the strip isn't all its cracked up to be... as the driver you miss half the stuff because you gotta watch the road! Walking or taking a tour affords you a much better experience.
I didn't spend any money on tables, but I did spend some time and money in the lounges listening to live music. All in all, it was a great experience. I can't wait to go back with my family!
