We LOVED Malaquite (just as described by Skipnchar above). Right on the beach, and oh my, what a beach it is. While there are people out and about, and the campground is most always pretty full, everyone is out exploring the many miles to explore, and it never feels crowded. Love it.
Also, don't miss Goliad, TX north of Rockport near Victoria. There is so much Texas history in this charming town, and the friendliest people around. The state park is beautiful, with huge RV sites, each a good distance from others. There were only a handful of folks staying there when we were there. Beautiful old missions, and courthouse complete with hanging tree. I think, but not positive, that you can stay up to 30 days.
