I second Fruita in Capitol Reef as you are right in the middle of a less visited but spectacular national park. Also, Watchman for the views in Zion. In late October, early November the fall color in Zion is spectacular and fewer crowds except for weekends when hordes from Vegas swarm. Seriously, though, we need more national parks and monuments, not fewer. They have been recognized internationally for the Crown Jewels they are and they are supremely popular.
