From I-40 take 180 at Holbrook to the beginning drive of Petrified Forest Nat'l Park. This first part is the most interesting. The park road will then take you to Painted Desert overlooks and back to I-40.
Acoma Pueblo Ruins just west of Albuquerque gives a good tour.
You could also get off I-40 on 191 south at Sanders, AZ and then pick up 81/53 into New Mexico which will come out at Grants, NM. By taking this you could stop at El Morro Nat'l Monument which also has a nice dry campground. There's also Bandera Crater and Ice Caves.
From Grants to Santa Rosa there's Albuquerque if you want to do anything there.
