For your first snowbirding trip trying out different areas is highly recommended. It would be a shame to be stuck somewhere and already paid for it when you find out it's really not for you.
For Mississippi and Alabama you'll want to stick around the Gulf coast for the warmest (definitely not real warm, but doable). For Texas the Hill Country will be colder in Dec/Jan than farther south. Rockport and Port Aransas are nice areas.
Have a great winter. You'll get hooked!
Next year try out southern Arizona or southern California. New Mexico can be very cold and windy.
