I'm thinking of doing something similar. My new (to us) '04 Itasca has 2 slides, but only a 30A service and a single ducted A/C. During the summer, we go to the Colorado River and camp, often in 115+ degree heat. I KNOW that a single A/C is not going to cut it. My 30A cord goes into the ATS (mounted in the elec/cord compartment), and from there works it's way to the opposite side of the RV to the main 30A panel.
My thought is to replace my 30A cord with a 50A cord, into a new Panel (plenty of room in my cord compartment). From there, one leg of the 50A would go into the existing ATS that feeds the original 30A panel (now a sub-panel), while the 2nd leg would be dedicated to a second A/C unit in the bedroom only. I would have to make sure that the leg to the old panel is the one that's hot when using a 30A adapter for those campgrounds that do not have 50A available, and obviously my 2nd A/C would be inoperable there, as well as while on generator, which is acceptable to me.
Anyone see a problem with my proposal, or am I missing something?
