Assuming you just want to cut down the bed to gain floor space next to it, that probably is possible (most anything is) given enough time, effort, and/or money. How practical it is depends greatly on the specifics of the motorhome design.
Usually the space underneath the bed is filled with something else--often water tanks, storage compartments, or some of the RV systems. If you just have storage under the part of the bed you want to remove, then it should be fairly straightforward, though it may involve fabricating some flooring and supports for the same. If there's a water tank, that will be quite difficult to work around. If it's other systems, like electrical or furnace or whatever, it could vary from tedious but not too difficult all the way to nearly impossible.
I think you would be better off finding something with a more accessible bed than trying to modify a corner bed. One possibility might be a rear slide (as in one that slides out backwards), such as the Winnebago View 24G.
Frankly, there's not much difference actually driving the longer and shorter units. The longer ones are more cumbersome to maneuver in close quarters, but once you get out of the gas station or parking lot I don't think it makes much difference. That doesn't help things when your driveway is shorter than your RV, of course.
