The paneling glued to the 1x2 wall studs actually make for an extremely lightweight but yet STRONG "structure". The cabinets have NOTHING to do with the strength nor stability of a RV structure.
Interior "walls" may "help" with some possible "racking" but the RV will not fall flat like a "cracker box".
My current TT I removed EVERYTHING, cabinets, paneling, interior walls, roofing, siding. My TT even sat during several winters with NO interior at all. Had at times 12 or more inches of snow on the roof and it STILL did not fall flat.
RV structures are surprisingly strong and resilient, they have to be since many times they are towed many miles at speeds of 65+ MPH PLUS any winds.
