The cabinets do NOTHING other than take up wall space, they do not contribute to keeping it from folding flat, neither does the interior walls. Especially when most RVs do not have much if any real SOLID walls to speak of.
Where the OP IS going to find problems is by moving HEAVY objects around without recalculating the changes to the balance of the trailer. Things like water tanks, fridge, batteries, propane tanks ARE specifically DESIGNED to be in the spots where the manufacturer PLACED them for a REASON. One mistake in this area WILL cause severe stability problems when towing.
a 5vr REQUIRES min of 20% pin weight, moving even the fridge a couple of feet back towards the rear WILL affect the pin weight negatively. This move would require SOMETHING else heavy to be placed FORWARD to balance the effect.
I would recommend the OP to actually seek out a CUSTOM TRAILER BUILDER and have a custom trailer designed and built. Should be able to get into a custom built 5vr somewhere around $45K-$50K..
