Followup:
Anyone looking for a thermostat, seriously consider Ecobee. Their customer service is amazing. Their support team has come back with multiple answers and solutions to help with their product.
They confirmed Chris's suggestion of the relay, sent a diagram, and went so far as to send me the amazon link to the needed one lol. Wow. Really impressed, and looks like we're full steam ahead on executing this.
Basically three 90-290Q relays with the 24v in going back out the the negative from the 24v transformer. And on the relay output side the -7.5v in and out.
Off to the electronics supplier this afternoon to source out some supplies. Then next is to design a small box to mount and hold the relays in so I can tuck it away out of sight. I'll then mount it out of site and just rerun hvac wires between it and the tstat.
