I would think doing something like this on could be a downside when it comes to resale value since you have further limited the usability of the already generally reduced cooking features with so many units now only coming with a microwave for an oven.
I think gas is still the way to go for cooking in an RV and I guarantee you food won't take any different in stove top cooking regardless of the method of heating.
