Hershey, neat idea. My first thought though is power. The temptation to use the micro and both induction plates at the same time will be like torture for your wife. I have your same model 30 amp coach and I struggle with power all the time. I have converted my coach to 50 amp but the focus for that was both ac to run, I could see there a 50 amp conversion with a focus on power to the cook center would work great too. If your question was looking for carpentry ideas I can't help. Good luck. We have a nuwave and no counter top space to put it so your built it would br great.
