I would like to put updated fixtures in our 2011 trailer. It has been impossible to find anything in any RV catalogues my hubby and I have. Question....can I buy a regular house fixture and rewire...

Sure, it can be done. If you can find halogen light fixtures you like, the bulbs are easily replaced with a variety of LED replacements.
FWIW, I made my own fixtures to replace the old and brittle RV fixtures that were in my TT. I used a Dollar Store decorative card frame and either 36-1210 SMD or 48-1210 SMD panels in warm white.
