The manual for my Winnebago Sightseer 35N gives a range of load for RV AC units. It says they draw 1400 to 2000 watts at 13 to 19 amps. Why would a 3000 watt, with a 6000 watt surge capacity, converter not run it?
It's not the inverter, its getting enough power to run the inverter. 19 Amps at 120v equates to about 190 Amps at 12v. One hour of operation then is 190 Ampere Hours, 2 hours is 380 AH. 2 6v GC batteries have a capacity of about 220 AH of which 110 AH is available, then you have to recharge the batteries.
