One potential option is to get a 120V fixture you like and put in a 12V bulb of the same form factor. For example, here's a 5W 12V LED Candelebra style bulb (I do not claim that this is either a good or an inexpensive source; it was just one that came up). You would have to make sure the ceiling structure is amenable to mounting your selected fixture.
I must say that a pendant light in an RV sounds like a bad idea to me in general. I'd think it would try to emulate a wrecking ball as you drive along.
