They also make little cast iron boxes for holding the smoke chips -- the heavier metal means that the chips get hot and smolder, rather than burning the way they do in the thinner stainless boxes. (I have tried both.) You just soak the chips, put them in the box, close the box, and set it down on the grate:

At home, I have a Big Green Egg smoker. Some folks take them on the road, but I think they are too heavy and fragile for that. So we make the smoked meat at home, freeze it in portion-sized bags, and bring the food with us. Almost as good as fresh made.
