If you still like to bake or broil you might want to consider a convection oven as well. They are not cheap but they bake better than most any of the RV ovens. They just don't have the capacity (reduced chip storage space!).
We have no oven but a gas cook top and the convection oven. The wife would like an induction cooktop as it would cut down on the heat generated while cooking on the stove top. I think if the induction is going to be your only cooking surface you might need 2. Otherwise, it sounds like a reasonable plan.
