Yes, it's been done but not by me. There are threads on this Forum but I can't recall the titles. A search might turn them up.

I've done similar residential installations. It is just straight forward carpentry. For an RV, I'd suggest a good locking system because of the movement while on the road. This could be as simple as a Barrel bolt lock.

Not exactly like yours. Our pantry has 6 shelves. I took the 3 bottom shelves and built pull out drawers in them to make it easier to get stuff out. Just slide the drawer out and see everything in the drawer.

Not exactly, but our pantry has shelves moveable up or down on pegs. None slide out, but we store most everything in rectangular baskets - convenient enough for us.
