My 507 sensors were hitting the edge of the wheel the same as yours shown in your pics. One eventually cracked so that's why I also when to metal valve stems. I got away with it though for about a year.
I installed mine this weekend and yes they can flex and contact the rim. I also note that, as in W.E.BGood's case, there is a fair bit of clearance between the hole in the rim and the valve stem. I intend to put flexible shim in that space until I get around to bringing the tire to the tire shop. Similar idea to the flexible hose that 93Cobra2771 installed.
Personally, I rather limit the deflection with a shim at this point. In the end the result is the same.
Your mod just might work if you can eliminate the flex; that's what cracks the rubber stems. Long term however I still recommend the steel valve stems.
