Elastomeric paint won't seal anything for starters. I painted my aluminum roof but not for sealing. The white elastomeric paint made the appearance better and dropped temperature by 10 degrees inside.
You can install your A/C before or after painting. The gasket is a mechanical seal, put into tension by the four bolts included for that purpose.
