I repack my bearings every fall before I park the TT. I also carry my IR thermometer and check my hub temps every morning after about 50 miles of travel. If I have a warm bearing, I can repack it right away. It would not take me very long to strip t down and repo it. I do carry a pretty good tool kit, jack, and stand. I have never had to do it on the road.
We put 3000 to 10000 miles on annually.

I also check my hubs with an IR thermometer. For me it's more for post brake adjustment checks than hot bearings. I would think that an unexpected hot hub reading (not brake adjustment related) would be a bigger issue than just needing fresh grease.
In my experience, a hot hub showed up after greasing a bearing - castle nut was too tight. From now on, I have a center punch mark at 12 o'clock on all my castle nuts, to reinstall the castle nut in the same position/rotation as before the re-pack process.
