Another method I have used is purchase a piece of project board from Lowe's or HD. As the OP stated, he would like to move the thermostat higher up on the wall, but there is some sort of monitor panel in that area.

By using a 1/4" x 6" or 8" project board, rounding the corners or trimming it, giving it a finished look, the monitor could be moved up higher along with the thermostat, covering the old holes & making new ones for the monitor & new thermostat.

I installed one of these Honeywell RTH5100B thermostats in our house a couple of years ago and it works really well, maintaining temps within 0.5 degrees Celcius. I particularly like how the display lights up as soon as any button is pushed so it's easy to see at any angle, in any light. Currently I have Hunter digital thermo in our trailer and although it too works well it has a non-illuminating LCD display so I plan to replace it this year with another Honeywell RTH5100B.

The Dometic digital thermostat came with our Minnie and I'm not really that impressed with it. But, I just changed the temperature variation from 2 degrees to 1 degree and I'll see how it performs when we need AC later today. When set on the 2 degrees setting, it felt as though there would be around a 5 degree temperature variation in the trailer when running the AC. We had the old analog version in our Sunline and it seemed to perform much better and was still working when we traded the Sunline after 10 years of ownership. And, I liked the ease of the manual button for fan speed.

If the Dometic digital continues to be inferior (IMHO), I'll take a look at the wiring and see about replacing it with the analog version which is still available at Amazon.

It works great, easy install & much easier to see.
