Whoever gave you the specs for the trailer was way off base. I have a 2004 36RS3 (36'9" long), ordered new in the fall of 2003, and the specs on it are:
Dry weight - 12,500#
Dry pin weight - 2500#
GVWR - 16,000#
It is still a great trailer and we love it. To quote one of the other posters, it IS built a lot better than the new ones. We just looked at new ones at the Tampa RV show and yes, they are nice, but the quality has suffered under the new ownership.

This is a bit of good news for the OP, as these are from a 36' unit, the OP's is a 32' unit. NADA listed weight at 12,000# which is the Dry weight. Loading with about 1,500# of stuff, so likely will be towed at 13,500#. This is getting into the doable range for that 2000 F250, you will be way over that 8,800# GVWR, if you have anything in the truck could be pushing 10,500#+. The 7.3 in 2000 is rated at 235 HP, so if you want to do better than just OK, a small chip is in order to get a few more HP, and a bunch more torque out of the 7.3.
Once again TIRES will be the limiting factor!! Not recommending you do this that is personal choice, BUT if you do make SURE you have enough tire to carry what ever the load is.
First thing you need to know is what your TV weighs currently ready to go camping. and the individual axle weights unloaded.
I tow over GVWR, my TV is heavy before I connect the 5er, but my 5er is only about 11,000, and run just under 20,000# GCVW.
Good luck and please report back what you find out about the 5er's weight, and what your TV scales.
