OP do your self a favor and decide what item you want to keep. Now find a match. You need more truck for sure! If you want to keep the truck a 11-12K wet RV will be fine.
Keep the RV a 3500 SRW 13 and newer RAM may fit your needs. Of course you can always add 19.5's and bags to the truck. Then you will need to add more power if you tow out west or in the mountains.
Bottom line get a proper setup right from the beginning and enjoy Camping or you will be constantly chasing your tail.
We get a lot of nostalgic comments about the 7.3, great motor, great truck. I towed with one for nearly 16 years. I would probably still be towing with it , but it just wasn't enough truck for a 13K plus fifth wheel. Anything much over 10K that truck is going to struggle in the mountains, getting up to a decent speed to enter the freeway on the uphill ramps etc. etc.
Short of 19.5 tires I did the airbags, tuner, exhaust, intake, and even a larger intercooler to help keep the ETG's down. Mine was a 350, not the 250, what the op wants to tow with. There is just not enough truck there, power wise , load wise etc etc. speaking from a lot of experience with that truck, it will not be a good towing experience. Great truck for towing, just not that much weight.
