Congrats on the new toy hauler, they are a lot of fun. Yes, you will have less pin weight when your Harley get loaded into the back of the TH.
A Harley in New Mexico, the first place I'd go is the Coronado highway just inside Arizona. Have always wanted to ride that.
For a GM HD 3.5" drop is not really a lot. The rear ends are much higher than Ford or Dodge.
I hooked up to my parents 5th wheel 2 weeks ago with my 2015 2500 ram and it dropped 3" and squatted level.
