If I just assume I'll be pushing max gross on the truck it only leaves 9800 pounds for camper. That seems a safe assumption once I guessed at some weights and ran the numbers back through to see how 20% affects my cargo capacity.
We have no choice but to make some guesses, toss them through the math, and then see if they make sense compared to real world experience. Otherwise we'd have to hook up to everything we looked at a weighed it.
I do appreciate all of the input guys. From the sound of it, if one is going stay on the stickers, throw away any notion of towing capacity. With 5th wheels it looks like the TV gross is usually pushed to near its limits so you might as well plan for that and know going in you have to keep excess **** out of the truck.

Keep in mind that you need to add the Pin weight to the GCVWR-GVWR, as it becomes part of the GVW.
My 5er weighs about 11,000#. TV weighs 10,000# on the wheels with the 5er attached. The 5er has about 9,000# on its axles when attached to the TV. therefor the 5er really weighs 9,000# + Pin of about 2,200# or 11,200#.
